How to Make Spam Onigiri: A Hawaiian-Japanese Flavor Fusion

Equipment:

  • Large skillet

  • Sharp knife

  • Plastic wrap (optional)

  • All the other equipment from the Basic Onigiri Recipe

Ingredients

  • 2 cups cooked Japanese rice (short-grain rice is recommended)

  • 1 (12-ounce) can Spam, sliced

  • 2 tablespoons soy sauce

  • 1 tablespoon sugar

  • ½ teaspoon black pepper

  • 1 teaspoon sesame oil

  • Furikake (Japanese rice seasoning), for sprinkling

  • All the other ingredients from the Basic Onigiri Recipe

Instructions

  1. Cook the Spam: Heat a large skillet over medium heat. Add the sliced Spam and cook until browned and slightly crispy on both sides, about 3-4 minutes per side. Remove from heat and set aside.

  2. Make the Spam Glaze: In a small bowl, combine soy sauce, sugar, black pepper, and sesame oil. Whisk until the sugar dissolves.

  3. Glaze the Spam: Return the cooked Spam to the skillet. Pour the glaze over the Spam slices and cook for an additional minute, flipping occasionally until the Spam is nicely coated.

  4. Assemble the Onigiri: Follow the instructions in the Basic Onigiri Recipe. To add Spam, create a small indentation in the center of the rice ball and place a slice of glazed Spam inside. Cover the Spam with more rice and shape as desired. Sprinkle with furikake for extra flavor.
